How to prepare oreo cookies:
1 Sift the flour and cocoa, mix baking soda and baking powder. 140g butter whisking, gradually add 200g powder and whisk. The weight should be light and fluffy. Add egg, whisk and add the flour. The dough should not stick to hands strongly. Divide into 3-4 pieces and put into the refrigerator for 20 minutes.
2 Preheat oven to 180 gr. Roll out of the dough, cut out circles and transfer to a baking sheet (it is better to lay a baking paper). Bake for 10 minutes.
3 For the filling, beat 80g butter until it becomes lighter. Add the icing sugar 150g and constantly stir. Cream is better to warm up to 40 grams. And slowly added to the oil and stir. After 8 minutes to get the air mass without particles of powdered sugar. Optionally, you can add more cream.
4 Connect the halves of the pastry cream. Cookies are best kept in the fridge.
